Hello and welcome to my first blog post!
My name is Josie Thompson. I currently live in Brecon, Wales. I am 24 years old and I have a daughter who is 13 months old. I wanted to start this blog because - well long story short I just love food... I also love trying to educate people in food. I constantly get family and friends asking me questions.. I also love talking, this is well known amongst my friends and family!
I don't know exactly where my love of food came from, my parents enjoy food and used to do a lot of entertaining but my dad used to work in advertising and my mum works in pharmacology. There isn't an event or time that I remember wanting to be a Chef, I just always have. Some might call it destiny...
I graduated from Westminster Kingsway College in London after studying for 3 years with a diploma for Professional chef level 3, along with my NVQ 1,2,3. I have competed in a range of competitions with my college and personal too. My best personal achievement would probably have to be 'Mackays annual bacon fest champion' this is just a friendly gathering every year everyone makes something with bacon... I actually have a trophy on my mantelpiece!
Whilst doing my studies I worked for GG Sparkes butchers in London, this is where I discovered my passion for meat and butchery. It is such an art and it is completely overlooked amongst foodies, especially as the latest trends are vegan and vegetarian. As I live in a farming community and have farmers in my family, I feel its such an important thing to buy as local as possible, for the best quality ingredients. I have travelled and cooked in a variety of places, I did a ski season in France. This was in a high-end chalet, where a lot of focus was on the food and wine. I was able to get great quality ingredients at my fingertips. I loved my time doing this it was such a positive experience for my learning but also meeting new people each week and yep, talking!!
Oh - the skiing was also a great bonus to the job!
I have now relocated to Brecon where I now run my business 'Arabella's Private Dining' started in 2019. I get to do what I love every day - 'if you do what you love, you never work a day in your life' it is so true!!
Heres 10 facts about me and my love for food;
1. My favourite cut of meat is pork belly or rib-eye steak.
2. My most used kitchen item is salt...
3. My biggest pet hate is overcooked steaks!! (I won't even get into that..)
4. My favourite herb is coriander
5. My favourite cheese is parmesan
6. My favourite food scene so far has got to be London, SO much to see and its always evolving!
7. I really want to visit China (after coronavirus!)
8. My favourite cuisine is Chinese/Asian.
9. After butchering a pigs head once I attached the ears to my hat and wore them for the day, It made the customers laugh...
10. I'm my worst critic!
